how does one create an album
First go to your Profile … Then select Gallery … then select one of the two types
From that point on, it is reasonably intuitive [the words are hyperlinked to do what needs doing]

How do I find my previous albums before the site changed?

You can’t as they no longer exist. Images from them that were used in posts still exist so you may be able to find individual images that way.
