It depends not just on how its wired, but also on how it's programmed – there are many ways of doing it.

I have speed, e-stop, start and stop all wired to a control box on the lathe. There's a switch on the speed control so when its at 'zero' it goes into jog mode. if find this really useful. I also have an analogue meter reading instantaneous power so I can see if I'm pushing 'the envelope'.
